This Festive Drink – The Method
WHere is a home-style version of a cocktail found on the seasonal cocktail list. It's a party-sized premix that is bursting with essence of the Christmas time, making it excellent for your festive gathering. Reserve the remaining syrup for breakfast cocktails, desserts, or to make additional servings of the drink.
The Bikini Cocktail
Yields 10 people
For the Clementine Syrup (yields 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar
Ingredients for the Cocktail (makes 850ml, serving 10)
400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, to finish
Directions
For the Cordial: Put the listed items in a pot, heat until it reaches a gentle boil, mixing so the sugar melts. Then, take off the stove allowing it to cool down fully. Pour to a sterilised bottle, close it keeping it in the refrigerator, where it will keep for around a month.
To make Cocktail Base: Pour all the liquid ingredients into one sizeable container, leave to sit for one hour, then filter it best through muslin, to ensure it's fully clarified.
To serve: Pour 85ml of your batch mix into a stirring glass containing ice, gently stirring lightly for one minute until cold. Filter into an chilled martini glass or similar, garnish with some cranberries and complete it using a quick spritz of the essential oil over the top.
